Strawberry Jam
I bought two flats of newly picked sweet strawberries. Mom helped me hull them and I made two batches of jam. The jam filled 17 assorted used jam jars but came out foamy. I did add a pat of butter but it foamed up again. I am thinking I had the heat too high. Sure does taste good although it won't win any prizes for looks. Has anyone else had this problem?

It happened to me with a few batches of blueberry & peach jam. Most of it I could "fold in" in the jar. Some I just left alone. My grandson asked "whats that stuff" I told him it was bubbles from me whipping the love into it!
I was meaning to ask you...have you ever prepared and canned re-fried beans? I love them but when I want them....I want them! Not to wait for them to cook.

I have done up lots of dried beans so they would be ready to refry. The less processing the better to can. You can find the instructions on my web site under canning dry beans. Just fill the prepared jars with dry beans about 1/2 way and fill with water. Add spices or garlic if you want. I do mine plane. Pressure can for 75 minutes for a pint and 90 for a quart. They come out done. Some people like to presoak them first. i HAVE DONE IT BOTH WAYS.
